This post comes on the heels of another creation by our resident Tonight’s Better Together Chef, Joe Choi. He brought you an amazing chocolate chip cookie recipe previously and now he’s come to finish the job by helping turn those cookies into ice cream cookie sandwiches! If you’re not quite sure about dairy free ice cream, get ready to have your mind blown.
Banana ice cream is exactly what it sounds like. It’s ice cream that is solely made up of bananas. This is a relatively easy ice cream to make and it is dairy-free, which means this will be delicious for everyone. Basically you want to take some ripe bananas, but not banana bread ripe, and peel and slice them into medallions. Next, spread them out on a tray and place them in the freezer for 15-25 minutes or until they are solid yet pliable, not frozen solid. Then you’ll want to use a food processor and blitz all the banana medallions until it starts to become smooth. Sometimes I will add a table spoon of hot water (or tea) to help blend it or defrost it a bit. You want to keep processing the bananas until you have a smooth mixture. Here you can fold in your favorite jam, or peanut butter or anything you’d like. Finally, scoop it into a container and place it back in the freezer for another 10 minutes to re-solidify it. You should get a texture like ice cream with a slight hint of banana. There you go: dairy free ice cream to enjoy with your fresh baked chocolate chip blondies.
